Mini Quinoa Pizza Bites

 
1/3 cup chopped onion
½ yellow pepper
1/3 cup chopped cherry tomato
1 clove garlic minced
½ chopped fresh basil
1 tsp dried oregano
1/3 cup pizza sauce
1 cup shredded cheese
1 cup cooked spicy chicken sausage
2 eggs
2 cups cooked quinoa (1 cup uncooked with 1 ¾ cup water – boil til water absorbed)
Mix all together in a bowl
Fill greased mini muffin tin with mixture and pat lightly with spoon
Bake 20 min at 350 degrees
Yield is 28  (to cook remaining 4 fill the empty spaces in pan with water)
